Coffee: Campos
Machine: Slayer

Any time you put the words coffee and Sydney in the same sentence, your bound to hear the word ‘Campos’ come up. On my last visit to Sydney I visited a few cafes (not on official business) and was pleasantly surprised at what was on offer, especially at Mecca. And even though I knew that Campos was a coffee institution, I just never got around to visiting. Well this time around I researched a bit more thoroughly, asking some baristas who spoke extremely highly of both Campos and it’s founder, Will Young.

For some reason I was under the impression that Campos was closed on the weekend, I may have mixed it up with the opening hours with Single Origin, so instead I pursued some other cafes, putting Campos back on the shelf. And to be honest I was pretty upset that I was going to Sydney and missing out on Campos again, especially after all the hype that I built up about it throughout the week.

Later that night while trying to decide what to eat, Crystal and I were reading the Timeout Sydney Magazine and Campos popped up. She asked me what I thought about Campos coffee and I gave her about a 15 minute spiel about what I knew. When I stopped talking (this happens very rarely) she let of a sigh of relief and said “Awesome, because I booked you in for a cupping there tomorrow!”

Fast forward 24 hours and we were eagerly (I say ‘we’ but probably should have been ‘I’) waiting in the absolutely packed Campos Newtown.

We were called out and taken through the back door, up a very dark staircase and into pitch-black room. The only light in the room came from a spotlight that was beaming down onto a beautifully organised table at the back, meticulously set up for a cupping session (It was perfectly arranged and well designed). The stage had been set and the coffee was the star of the show. Or that’s what we thought. Just like any other great film when you thought you had it all worked out, the plot twisted and the protagonist wasn’t the coffee, because (very similar to The Third Man) hiding in a dark corner in the room was Will Young! I was excited before, but to know that he would be personally taking the cupping was awesome, it was an honour.

Now I don’t want to ruin the experience for you all so I won’t go into any further detail about the cupping, but I will say this:

we cupped 6 different origins and the cupping session was one of the best, most informative coffee experiences I’ve ever had.
I learnt so much in those 45 or so minutes, and it was all thanks to Will, who is still so incredibly passionate and enthusiastic about coffee and the whole industry itself. He really was the star of the show; the spotlight should have been on him.

I also have to say thanks to Crystal who surprised me and organised the cupping for me. She is awesome. And believe it or not (she’s not a big coffee drinker) she really enjoyed the cupping, and has only also has amazing things to say about Will and Campos too.

Here is the link to Campos email, if you live in Sydney, or are visiting there soon I strongly recommend going to a cupping. It was an invaluable experience for me, as im sure it will be for you too. Book early as places are limited and there is a waiting list!

By the way i had a latte while waiting at Campos and as im sure you would have guessed by now, it was exceptional. One of the best i've had!
